Southern Style Seasoned Green Beans (From Canned)

ingredients

  • 2 (14 1/2 ounce) cans cut green beans (not french-style)
  • 4 slices thick-cut bacon
  • 14 teaspoon minced garlic
  • salt

directions

  • Cook the bacon in a heavy sauce pan (do not crisp the bacon, just cook enough to extract the drippings). Remove from heat.
  • Empty the 2 cans of cut green beans into the sauce pan directly on top of the cooked bacon and drippings.
  • Add salt to taste and then the 1/4 teaspoons of minced garlic. Stir well and return to heat.
  • Bring to a boil over medium heat, then reduce heat to med-low, cover, and simmer for at least 30 minutes (1 hour is better).
  • Serve and enjoy.
  • NOTE - Use good quality canned green beans. My family prefers "flat beans" (Cut Italian Green Beans), but regular cut will taste just as good.

  1. Yes, yes, yes! These are delicious! I add more garlic mainly because we are addicted to it, and some dehydrated chopped onion. I also drain the cans of green beans and then add back about a cup of chicken broth or bouillion - and then cancel the salt. This is a wonderful way to get everyone in the family interested in eating their green beans!! Thanks so much!
     
  2. Had my doubts but I had all the ingredients and needed another side for party last minute and I didn't want to run to store. I simmered about 50 min. Everyone raved, more than the main dish that I spent all day on. It had the nice bacon flavor but no slimy greasy feel. Will make it again - maybe add shallots.

  4. For the 2 of us I used 1 can of green beans, chopped a slice of bacon and a couple of garlic cloves. The flavor was awesome. A wonderful fix for canned beans. This is one that I will make again.

Tweaks

  1. I drained Allen's flat Italian green beans and substituted one carton of vegetable broth for liquid, and I used powdered garlic and onion to taste. I simmered for an hour, but if time is an issue, they taste amazing after 30 minutes.
     
  2. Definitely southern style. I've fixed them this way for years. Another variation is to use small chopped up bits of country ham (instead of bacon) and omit the salt because of the saltiness of the country ham. I generally use Allen's flat-style italian cut beans but just regular canned beans works well for this too.
