Dressing
- 1⁄4 cup white wine vinegar
- 1⁄4 cup granulated sugar
- 1 cup mayonnaise
- 1 teaspoon celery seed
- 2 teaspoons prepared horseradish
- sea salt
- fresh ground black pepper

Slaw
- 6 cups shredded green cabbage
- 3⁄4 cup shredded red cabbage
- 3⁄4 cup grated carrot
- 1⁄3 cup golden raisin
- 1⁄4 cup coarsely chopped salted peanuts
- sea salt
- fresh ground black pepper
- 2 hard-boiled eggs, peeled and chopped
- 1 tablespoon minced fresh chives
directions
- Make the dressing by combining the vinegar and sugar in a small mixing bowl.
- Stir in the mayonnaise, celery seed and horseradish.
- Season to taste with salt and pepper.
- (Be sure sugar is dissolved before serving.).
- Toss the cabbages, carrots, raisins and peanuts in a large mixing bowl with desired amount of dressing.
- Season to taste with salt and pepper.
- Arrange in a serving bowl and garnish with the chopped eggs and chives.

Wow! JB this is great and is definitely going in the keeper file. All the different colors and flavors make this coleslaw the star of the show. Made as written and would not change a thing. The tag of the horseradish is offset by sweetness of the sugar to form a wonder dressing. And egg? Had never though to add egg to coleslaw but the egg and chive do make a great garnish to this wonderful slaw. Thanks so much for the post.
