Onion, Olive and Orange Salad

  • Spread romaine leaves on a platter. Scatter red onions and olives over top. Remove skin and white pith from oranges and slice into sections. Place over onions.
  • Whisk together lemon juice, sugar, cumin, paprika and olive oil.
  • Drizzle over salad. Garnish with parsley.

  4. Light, refreshing, flavorful, easy. Wow, who would have thought? I didn't want to do a regular Greek salad but did want to use up some black olives. The reviews were good and this was very minimal effort and a short list of ingredients. I LOVED it. I don't even care for cumin but somehow this just worked and I even added extra to the dressing. Highly recommend. Doesn't need anything extra, but I think you could if you wanted to.

Tweaks

  1. Lovely salad, beautiful to look at and flavourful to eat. I wasn't sure that I liked the dressing when I tasted it before adding to the salad but something wonderful happens when it mixes with the other ingredients. I did switch up the cumin with chili powder due to family preference. I do think the cumin would be nice in this though. Thanks for sharing your recipe.
