Easy Frozen Coconut Cream Pie

- 1 (12 ounce) container Cool Whip, thawed
- 1 cup sour cream
- 1 cup sugar
- 1 1⁄2 cups coconut, flaked, sweetened
- 1 (9 inch) graham cracker pie crust
directions
- If using a homeade graham cracker pie crust, prepare and cool completely.
- In a medium mixing bowl, whisk together Cool Whip, sour cream and sugar. Fold in 1 cup coconut.
- Spread filling evenly into pie crust, forming peaks with the underside of a spoon.
- Sprinkle top generously with remaining coconut.
- Freeze, uncovered, for at least 8 hours.
- Cut into slices and serve. Cover loosely with aluminum foil and store left overs in freezer.

I read a lot about and hold my own personal skepticism regarding the affects of additives such as preservatives, hormones, artificial colorings, artificial sweeteners, caffeine, allergens, etc. With the increasing number of children and adults with food allergies, I am suspicious that the last century of our nation's food industry improvements have contributed. I'm doing the best I can to protect my family from the risks, but it is difficult to avoid every additive. I have friends and family with food allergies and know how difficult it is to cope with food restrictions. I enjoy the challenge of cooking for those with food allergies but can't imagine making it an every-day affair.</p>
