  • preheat oven to 350 degrees. grease and flour a 9x13 inch pan.
  • in a saucepan, mix brown sugar, water, dried fruit, applesauce, and coffee. bring to a boil and boil for 3 minutes. remove from heat and let cool.
  • in a large bowl, combine flour, baking soda, salt, and spices.
  • when dried fruit mixture is cool, add to dry ingredients and mix well to combine.
  • pour into prepared cake pan and bake for 30 to 40 minutes.
