  • Combine coriander and the next 5 ingredients (coriander through 1/8 teaspoon black pepper); rub evenly over both sides of chicken.
  • Add chicken to pan; cook 5 minutes on each side or until done.

  1. Fantastic and quick one-dish meal. I placed mine on a bed of spring-mix greens, although I had some diners who did not. The spice rub really makes this chicken flavorful. I had to make a second batch of the spice rub due to the large size of my chicken breasts. Also, to ensure thoroughly cooking the inside, I placed a lid over the breasts during cooking.
