Meatball Curry With Tomato Basmati

  • Heat oil in a heavy based frying pan and add onion. Fry until golden then add garlic and ginger. Cook for 1 minute then add spices and fry for 2-3 minutes.
  • Add tomato and mix well. Add 1 cup of water and season with salt to taste. Add meatballs. Cook without stirring for 5 minutes covered, then cook uncovered for 10 minutes until meatballs are cooked through. Add extra water if you feel the sauce is too thick.
  • To make tomato basmati, place rice into a saucepan. Add tomato, bay leaves and cardamom and season with salt. Just cover rice with water and bring to the boil over medium heat. Reduce heat to low and simmer for 15 minutes or until liquid is absorbed. Remove from heat and stand, covered, for 10 minutes.
  • Garnish meatballs with coriander and serve with rice.

I live in Perth, Western Australia. I am an Office Manager in a Mining Exploration Company. I love summer and going to the beach. I also like rugging up in warm clothing during winter. I love watching cable tv with my hubby on quiet nights at home. I love cooking with a glass of red wine but equally I like a beer or two! I have two cats who I adore but who live with my parents as our place is on a main road and I want them to have a long life. We have recently acquired 2 Jack Russell puppies who are so adorable. They are now part of our little family. DH and I like to get away down south of Western Australia at least 4 times a year. We are happy to stay in 5 star hotels or camp! Depends on the mood! We have recently purchased a block way down south of Western Australia in a little coastal town called Hopetoun. We are looking forward to building a house and spending a lot more time down there, with the view that we will retire down there and enjoy our fishing life. I am happy with my life and look forward to having children with my lovely husband.
