Green Mint Crinkles

"This is a fun holiday recipe (especially Christmas or St. Patrick's Day) originally from the cookbook "Honest Pretzels." I made a few small changes and additions to the recipe. We love them! They are very pepperminty."

  • Preheat oven to 350 degrees. Line a baking sheet with parchment paper or spray lightly with cooking spray.
  • Mix melted butter, sugar, peppermint extract and vanilla extract. Mix in beaten egg and milk and stir well.
  • In a separate bowl stir together flour, baking powder, salt and jar of green sugar crystals.
  • Add flour mixture to butter mixture and stir gently until well mixed. Using small cookie scoop or hands, form small balls (about 1 inch). Place on prepared baking tray (they can be close, but not touching).
  • Bake for 10-12 minutes. If desired, take out a few minutes before the baking time is up, decorate the tops with kisses or chips and bake for a couple minutes more.
  • Cool on a wire rack, then enjoy! These cookies taste best after cooling to room temperature.

  1. Just made for early St. Paddy's Day. This was the perfect recipe to use up some kisses and green sprinkles I had. Good cookie and the thing I liked the most was coloring the cookie with the sprinkles. Looks just like the picture. I was a little scared about putting the kiss on top of the cookie 2 minutes before being finished. I was afraid it would melt down but it didn't and kept the chocolate a nice color and soft even with the cookie cooled. I will make again with different color sprinkles, extracts and kisses. Thanks!
     
  2. If you like peppermint, you'll love these! I used some chocolate carmel kisses and some cookies and cream kisses for a different look and taste. These were a hit with my family and the ladies at church at a gathering that fell on St. Patrick's Day.

  3. Such a fun recipe! I've never baked with sugar crystals actually inside my cookies before, but it totally worked and made these super green! Love that you don't need an electric mixer or anything; so easy to whip up by hand! I took the advise to pop a Hershey's Kiss in the centre with a couple minutes left of baking and they turned out great!

I remember my mom let me bake cookies by myself for the first time when I was five. I was hooked from that time. I love to bake and cook. Trying new recipes is especially fun for me. I usually try at least two-three per week. Of course, I have a lot of favorites that we have over and over again too. One thing that I've really gotten into recently is trying to lighten up some of my favorite recipes. Homemade pizza is one of my specialties. My husband thinks my pancakes are the best.
