  • 1. Cook hamburger, onion, & seasons until done.
  • 2. Add cooked rice & salsa.
  • 3. Add grated cheese.
  • 4. Cover & continue cooking for approximately 5 minutes (until cheese is melted).
  • Serve while hot.
  • This mixture can be wrapped in soft flour tortillas w/additional salsa added.

  1. I made this with brown rice and didn't put the cheese in the skillet, just sprinkled some over the top. I also chopped a zucchini into it as the meat was cooking. Really easy to make and I have good leftovers.

I've been cooking forever it seems like. I learned by watching my mother & grandmother. No one could make fried chicken like my gram. Beyond belief!! Not to mention her peach pie. My son has followed in my footsteps & is even a better cook that I am or probably could hope to be. (I think I'm jealous). Many years ago I had a catering business @ first w/my cousin but she dropped out shortly. My son started helping me out & it was awesome. However, this was on the side from my regular 8 - 5 job & I just couldn't keep up w/it.
