  • Preheat oven to 350 degrees F.
  • Melt butter in heavy medium saucepan over low heat.
  • Add sugar and stir until mixture is heated through.
  • Transfer to bowl.
  • Add eggs, lemon juice and vanilla and whisk to combine.
  • Stir in 1 1/2 cups coconut.
  • Pour filling into crust.
  • Bake until filling is deep golden brown and set, about 40 minutes.
  • Cool on rack.
  • (Can be made one day ahead. Cover and chill. Bring to room temperature before continuing.) Garnish with shredded coconut, if desired.
  • Makes 12 servings.

  1. The picture shows with a meringue topping, the recipe doesn’t mention anything of the meringue... so that’s optional?
     
  2. when making this pie (haven't) done it yet doesn't look like its enough liquid to make the filling. Is the recipe correct or is it missing milk or some other liquid ?

I made it exactly as recipe, with the exception of the coconut flakes. i made this pie exactly as recipe and instead of coconut flakes from the store, i had my own coconut flakes left over from making coquito. OMG!!! The pie turned out extravagantly amazing. Wow! Just wow!!! It was perfect!!! Not too heavy not too sweet. Perfect, just perfect. Thank you.
     
  3. The recipe is only for one pie! After that, I had to make another one. It was so good.
     
  4. My husband bought extra large eggs by mistake. Would I still use 3?

Tweaks

  1. This was really, really good!!! And really easy to make too. I substituted fresh shredded coconut and 1/2cup sugar for of the sweetened coconut, since that's what I had, and it turned out terrific. Thanks for a keeper!
