Weight Watchers Squash and Tomato Saute

ingredients
- 2 teaspoons olive oil
- 1 zucchini (halved and sliced)
- 1 yellow squash (halved and sliced)
- 1⁄2 teaspoon salt
- 1 garlic clove (minced)
- 1 tomatoes (chopped)
- 2 tablespoons fresh basil (chopped)
- 1⁄4 teaspoon ground pepper
- 2 tablespoons parmesan cheese (grated)
directions
- Heat oil in large skillet. Add zucchini, squash, salt and saute 5 minutes or when crisp tender.
- Add garlic saute for 30 seconds, stirring constantly.
- Add tomato and cook 1 minute until headed through.
- Stir in basil and pepper.
- Sprinkle with Parmesan.
- Serve immediately.

<p>I am a high school teacher in Omaha, Nebraska. My love for cooking started at a young age when I used to bake goodies for my father and his coworkers.
