ingredients

  • 1 12 cups self-raising flour (stone-ground wholemeal240g/7 2/3oz)
  • 1 teaspoon baking powder
  • 2 tablespoons brown sugar (or low calorie sweetener suitable for baking)
  • 2 eggs
  • 140 g puree (unsweetened apple 4 1/2oz)
  • 1 cup low-fat milk (250ml/8fl oz)
  • cooking spray (olive oil spray specified)

directions

  • Sift the flour and baking powder into a bowl and stir in the sugar or sweetener and make a well in the centre.
  • Whisk together the eggs, apple puree and milk and pour into the well and whisk until smooth.
  • Lightly spray a fry pan with olive oil spray.
  • Pour 1/4 cup (60ml/2fl oz) of the batter into the pan and cook over medium heat until bubbles appear on the surface and then turn and cook the other side,.
  • Keep warm while you cook the remaining batter.

  1. Wonderful, healthier pancake for me!!! I made this but scaled back for 1/2 of the amounts. I agree with another reviewer, they do burn easier, I think because of the added sugar. They rose so nicely and I couldn't believe it was with no added fat!!! Next time, and there will be many, I will omit the sugar completely, as I serve mine with fresh sliced strawberries or maple syrup, so that sweetens them plenty. Thanks for sharing the recipe. Made for Holiday Tag Game.
     
  2. Great pancakes! So light and fluffy and I liked the addition of the brown sugar. I made half of the recipe and used some of the applesauce, warmed and mixed with just a little syrup, as a topping for the pancakes. Thanks for sharing the recipe!
     
  3. ok mine rose like crazy but i always put in a little lemon juice to all my pancakes just personal taste and helps activate the bp <br/>these can burn a little easier than regular pancakes i liked these alot
     
  4. Pat this is wonderful and so easy to put together. They were devoured for our Valentine's breakfast treat. Very light and moist texture. They don't rise a whole lot but that was fine with us. I topped mine with apple butter but my hubby and son used syrup. I would love to add a bit more cinnamon to these and then top with stewed apples and use as a dessert one night too. Wonderful recipe and one that I'm passing on to my parents as my dad is diabetic and this will help him so much. Made for Potluck Tag.
     
  5. Yum!! Served topped with some additional unsweetened applesauce and a dash of cinnamon, no butter no syrup thus taking an already yummy pancake and pushing it right over the top. So healthy and so good that you know I will be making again. Thanks so much for the post.

With the demise of the forums and with no more interaction on site with what was a great community and it was a pleasure to get to know so many of you over the years and to have had the privilege of meeting some of you in person. For me now this is just another recipe site like to many on the net, it has lost its specialness, such a pity especially when Scripps changed the name from Recipezaar to Food.com and made this statement sorry cannot replicate here as considered invalid but they basically said yes the community was valuable hence .com was short for community but it was a pack of lies as they were not willing to put the money into that community and got rid of the forums which was the community so for .com has become .crap.
