- 1 tablespoon plain flour
- 2 teaspoons sweet paprika
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon white pepper
- 4 chicken breast fillets
- 60 g butter (melted)

SAUCE
- 1⁄4 cup olive oil
- 1⁄4 cup lemon juice
- 1 lemon (finely grated zest of)
- 1 garlic clove (minced)
directions
- Preheat oven to moderate 180°C.
- Line your baking dish with baking paper.
- Combine flour, paprika, salt and pepper in a clean plastic bag and add the chicken and toss to coat (I just used a shallow bowl and dipped the chicken in the mix).
- Arrange the chicken in a single layer in the baking dish and brush the chicken with butter and bake for 30 minutes.
- SAUCE - meanwhile, in a small jug, combine all ingredients and season to taste.
- Pour sauce over chicken and return to oven for a further 20 to 30 minutes or until chicken is golden and cooked through.
- Serve with a salad of choice and prawn crackers, I served with mashed potatoe and steamed vegetables.

5 stars for flavor and texture of the chicken. I needed more of the coating than the recipe made to cover all of the chicken but that wasn't really a big deal as it took about a minute to mix up more. I had extra of the oil and lemon glaze and just tossed it into the Jasmine rice that was on the go along with a touch of garlic. What a great combo they made! a green salad was all that was needed for a marvelous dinner. Thanks for this one Pay. :D

We really enjoyed this lemon chicken. I normally do not bake boneless chicken breasts because they tend to dry out; however, this dish was moist and delicious. I doubled the lemon juice, but otherwise made as directed. DH really liked the flavor and gave it a thumbs up. Made for Everyday is a Holiday tag, September, 2012.

My chicken breasts were large (almost 8 ounces each), so I only used 3 of them! And instead of the salt & pepper amounts listed, I used 1/4 teaspoon of salt along with 1/4 teaspoon of lemon pepper, but otherwise, the recipe was followed! Absolutely delicious & a wonderful new way for me to serve chicken! Thanks for sharing this great recipe! [Made & reviewed in 1-2-3 Hits recipe tag]

With the demise of the forums and with no more interaction on site with what was a great community and it was a pleasure to get to know so many of you over the years and to have had the privilege of meeting some of you in person. For me now this is just another recipe site like to many on the net, it has lost its specialness, such a pity especially when Scripps changed the name from Recipezaar to Food.com and made this statement sorry cannot replicate here as considered invalid but they basically said yes the community was valuable hence .com was short for community but it was a pack of lies as they were not willing to put the money into that community and got rid of the forums which was the community so for .com has become .crap.
