Sauteed Zucchini With Sun-Dried Tomatoes

"A great side dish to pair up with beef, chicken or fish. Love the flavors in this dish - simple but full of flavor. I did add a clove of garlic to the original recipe just because I thought it would really give it a great background flavor. Tried and posted for ZWT7."

  • Wash the zucchini using a brush to gently scrub the zucchini and then pat dry with a kitchen towel. Cut off the stems and cut each zucchini in 3 or 4 pieces; then cut each piece lengthwise into 6 wedges. Set to the side.
  • Chop the dried tomatoes and set to the side.
  • In a large sauté pan, over medium heat, place 4 tablespoons of oil and the diced onion. Cook over a medium heat until the sliced onions are translucent, for about 4 minutes, stirring occasionally.
  • Add the minced garlic and sauté an additional 1 minute.
  • Add the dried tomato and sauté for additional 2 minutes.
  • Add the zucchini, salt and pepper to taste, then cover with a tight lid and simmer for additional 5 minutes or until tender but firm.
  • Using a slatted spoon transfer the zucchini into a large dish and serve while hot.

  1. This recipe has come at the right time. Australia is moving into summer and zucchini season. I’ll be adding a zucchini plant to the garden just so I can make this often. Made half a batch following all the instructions. Served with steaks. Perfection.

  2. This was fabulous. We all like zucchini, so I'm always on the hunt for good zucchini recipes, and this is one I'm going to keep for regular use. It's really easy to prepare, too. I served it as a side dish to Chicken Cacciatore, and it was a fabulous dinner. I would cut back on the amount of oil though, as even using a slotted spoon to transfer the cooked dish to a serving bowl still left a lot of excess oil. Thanks, HokiesMom. We loved it!

  4. Terrific combination! This is so easy, yet it's more flavorful than ordinary side dishes due to those sun dried tomatoes. I used half the amount of oil listed and still had great results. I just love finding new ways to make zucchini; thanx!
     
  5. M-m-mmmmm. This is SUCH a great healthful side that still has plenty of flavor. I absolutely loved the combination of sweet onion and tangy sundried tomato with the bite of the garlic and freshness of the zucchini. Perfect.

  1. It's summer and I subbed fresh tomatoes for sun dried ones. I also used local zucchini and yellow squash, fresh elephant garlic from my brother's garden, too. Very good and easy side dish for summer meals. Served with grilled chicken and orzo pasta. Reviewed for ZWT 8/Spain.
