  • Cut the cucumbers down the middle, lengthwise, peel and remove the seeds.
  • Rub the cucumbers with lime juice, and salt and pepper.
  • Cut the red pepper down the middle, remove the seeds, and dice into small pieces.
  • Combine the cream cheese and cream together with the remaining ingredients and mix well.
  • Fill the cucumbers with this lovely mixer and refrigerate for (at least!) 2 hours.

  1. Holy cukes! with a capital WOW. I don't even like cucumbers, I'd go as far as to say they are those little worms at the bottom of rock bottom. BUT these... oh wow... I was sitting in my ol' chair when my lovely wife brought me these cukes... at first I was suspicious..... but I gave em a go and oh boy oh boy. I can always trust LW when it comes to picking recipes... and again... she did not fail what a delicious explosion of flavours inside me ol' mouth. You've really done it this time Andi... what a large success.
     
  2. Andi's recipes are always a big hit at our house. This is a simple little recipe that packs a big flavour. I made as an appie by slicing the cucumbers into 1/2 inch thick rounds scooping out a little well in the center without going all the way through. Added the filling using a small 1 inch scoop so there were little round balls of flavour nested in the holes. I used fresh basil finely chopped. Know for next time that I better double the batch!

  5. What a great light & cool snack for a hot summer day. The lime juice really brought out a delicious flavor in the cucumber and the filling is just lovely. We had these with some guacamole and lime smoothies as an afternoon snack. Simply delicious. Made for ZWT 7.
