Banana Walnut Cupcakes With Cream Cheese Frosting

  • Cupcake batter: Cream butter and sugars, add mashed bananas. Add eggs and vanilla. Add flour, baking soda and salt. Stir in yogurt. Add walnuts.
  • Scoop into 12 cupcake papers (I used an ice cream scoop.) Bake in a preheated 350 degree oven for 18-22 minutes, or until a toothpick inserted near the center comes out clean. Mine took 20 minutes.
  • Frosting: Whip cream cheese, vanilla and confectioners sugar, by hand or electric mixer.

  1. Well... The jury is still out on the loaf, which is still in the oven ( to frost and take as a long narrow cake to my nephew's party). But the cupcakes are very oily. When I removed them from the pan there was a pool of butter underneath each cupcake liner. I was suspicious when mixing them up that one cup of flour was not enough to handle one half cup butter.. I think the proportions are off. They are also super super sweet for something that's yet to be frosted... Hmm. Not my favorite recipe from Genius Kitchen. The upside is that I made the cupcakes to freeze... Maybe the extra butter will keep them super moist after freezing...
     
  2. These may have tasted a little more like muffins, than cupcakes, but that was just fine by us! The recipe made 17 cupcakes for me, but I probably could have made them a little bigger. Still would have had more than a dozen, which was a bonus! We enjoyed them immensely, and will be making them again! Thanks so much for sharing a great recipe, missyqh! Made for Fall PAC 2011.

  4. I made this recipe yesterday and I would definitely never make it again. It was WAY TOO SWEET!!! Everyone in my family thought so and we ended up throwing out the last few. Take a look at the nutritional info.
