- 1 lb ground beef
- 1 (1 1/4 ounce) package taco seasoning
- 2⁄3 cup water
- 1 (16 ounce) can black beans, drained
- 2 cups cheddar cheese
- 36 wonton wrappers
directions
- Preheat oven to 375. Brown the meat in a skillet and drain off fat (I use a collander). Return the meat to the skillet; add the taco seasoning, water and black beans. Mix and simmer for 5-10 minutes, until water is absorbed.
- Spray 18 regular muffin pan cups with cooking spray. Place one wonton wrapper in each muffin cup. Divide half of the taco meat between muffin cups. Sprinkle half of the cheese over the cupcakes. Repeat layers - wonton, taco meat and cheese. Bake at 375 for 20 minutes, or until cheese is bubbly. Top with your favorite taco toppings.

You can't lose by using this recipe! What a fun activity with the kids too - letting them help build the cups. I did "hide" the black beans by mashing them up into the meat and topped a few with some corn as my family loves corn with their tacos! This is super quick, super fun and super delicious! Made for your Week #1 Win in Football Pool 2012.

These were great and very quick and easy to make. I did add some chopped onion to the ground beef while it browned. I used Recipe#76616 #76616 for the taco seasoning. I made 12 "cups" instead of 18 as I was pressed for time and was making these late at night for a family get-together. Served with lettuce, tomato, salsa, sour cream and avocado. Everyone enjoyed them. Made for your Week #1 2012 Football Pool win. Thanks for posting this great little recipe.
