directions

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, mash bananas with a fork until no longer lumpy. If bananas aren't very ripe, a hand mixer may be used. Stir in oil, oats, chocolate chips, and vanilla.
  • Lightly grease a cookie sheet.
  • For each cookie, spoon about 2 tablespoons of cookie mixture (or more depending on how big you want the cookie) onto the cookie sheet. Bake for 15-20 minutes.
  • **IF batter seems a little dry, add a little milk to moisten.
  • Variations: Instead of chocolate chips add raisins or craisins. Chopped walnuts are great in these cookies. Or, try coconut oil instead of canola oil.

Questions & Replies

  1. Which oats are the best to use? I used steel cut oats the first time and it didn't come out great. The cookies didn't have any taste to them and after a few hours they got really hard. Any suggestions? I really want to make them again, but I also want to be able to eat them this time. Lol. Thanks!

Tweaks

  1. I used unsweetend applesauce instead of oil, craisens instead of chocolate chips and baked in an 8x8 pan for 30 minutes @ 350. I cut them into 8 bars. They were moist and good. This will become one of my go to recipes.

  2. Raisins and pecans. 2d batch I added cinnamon.

  3. Added an extra 1/2 oats to try and prevent mushiness

  4. Coconut and dried apricots

  5. I was looking for something to satisfy my craving for something sweet without feeling guilty. I've made these a couple times now and they are always such a hit. The only thing I do differently is substitute canola oil for coconut oil, I find it pairs nicely with the banana flavour and tames it down a touch.
