Grandma's Banana Bread, Vegan

- 1⁄4 cup sugar
- 1⁄4 cup sucanat
- 1⁄4 cup canola oil
- 1⁄4 cup unsweetened applesauce
- 2 tablespoons ground flax seeds
- 6 tablespoons water
- 3 overripe bananas, peeled
- 1 teaspoon baking soda
- 1 1⁄2 cups flour (I use a 1/2 cup of all purpose and 1 cup fresh ground whole wheat)
- 1⁄4 teaspoon salt
- 1 teaspoon vanilla extract
- 1⁄2 cup chopped nuts (optional)
directions
- Preheat oven to 350 degrees.
- Mix flax seed and water together in a small bowl.
- Beat the sugar and sucanat with the oil and applesauce on medium speed of a mixer.
- Add the flax seed and water mixture. Beat a little longer.
- Add bananas. Beat until the bananas are well incorporated in the wet ingredients.
- Stop the mixer.
- Add flour, baking soda, salt and vanilla.
- Mix just until ingredients are all wet. You don't want to develop gluten and make the bread tough.
- Fold in nuts if using.
- Pour batter into a greased loaf pan.
- Bake at 350 degrees for 45-50 minutes until toothpick inserted comes out clean.

I have three children, college age to pre-school. My challenge is to cook nutritious yet delicious food that they will all eat. I still cook most nights of the week and enjoy trying new recipes. I am just learning that not everything has to be "from scratch" and it is okay to take a shortcut here and there. I love to bake bread and even own a mill to grind my own wheat. I still look for quick week night recipes and love to make a big Sunday dinner.
