- 1 1⁄2 cups all-purpose flour
- 1 1⁄2 cups cake flour
- 1 tablespoon baking powder
- 1⁄2 teaspoon baking soda
- 1 teaspoon salt
- 8 tablespoons unsalted butter, cut in 1/2-inch pieces and softened
- 4 tablespoons shortening, cut in 1/2-inch pieces
- 1 1⁄4 cups buttermilk
directions
- Adjust oven rack to upper-middle position and heat oven to 425 degrees. Grease 9" cake pan. Combine flours, baking powder, baking soda, and salt in large bowl. Rub butter and shortening into flour mixture until it resembles coarse meal (I use a pastry blender). Stir in buttermilk JUST until combined.
- Use greased 1/2 c measuring cup or large spring loaded ice cream scoop to transfer 6 heaping portions of dough into prepared pan, placing 5 around the perimeter and one in the center.
- Bake until puffed and golden brown, 20-25 minute Cool in pan 10 min then transfer to wire rack. Serve.

I am a former retail management slave who is now a stay at home mom who absolutely loves her job. I have an eight year old, a two year old and a nine month old who all bring their own kind of joy to my life. My favorite thing in the world is to cook. We have a real, from scratch family dinner almost every night. Please don't be offended if I somewhat change a recipe in my review. I look at recipes sort of as guidelines, and alter them according to inspiration. I've received alot of helpful advice from reviews, that's why I share what I've done differently. With my little ones I'm pretty busy, but I LOVE this site and plan on being even more active as they get older.
