  • In a large saucepan, melt butter over low heat.
  • Add the minced garlic and cook for about a minute.
  • Add tomatoes and 3/4 cup of chicken broth.
  • Increase heat to medium and bring mixture to a boil.
  • Reduce heat and simmer uncovered, for about 10 minutes.
  • Add cream and bring to a boil again, stirring frequently.
  • Simmer over medium heat until sauce is thick.
  • Sprinkle salt and pepper over both sides of chicken.
  • Heat the olive oil in a skillet, then add chicken and saute until chicken is no longer pink inside.
  • (About 4 minutes each side should do it.) Remove chicken from skillet, drain fat from skillet.
  • In the same skillet, stir 1/4 cup chicken broth with the pan juices, and bring to a boil; reduce slightly and add to the cream sauce; stir in basil.
  • Serve chicken atop the pasta, coat with the cream sauce.

  1. this was REALLY good and very easy to make. it's very close to the dish at the Macaroni Grill. the only changes i made, was i used bowtie pasta (like they do at the restaurant) and i added fresh spinach. the other thing i did, was when everything was ready, i threw it all in one big pan and mixed it together and heated it thru. that way i knew everything was well coated with the sauce. we liked this dish a lot, and will definitely be making it again. thank you!
     
  2. I had this dish at Macaroni Grill the other evening and said to myself: I can make this at home! This recipe was almost identical! Quite tasty. I take away one star only because I recommend cutting down on the chicken by a lot. Probably one chicken breast would do it for me. Pretty much every bite had chicken in mine and I would prefer more sauce and less pasta. I used bow-tie pasta instead.
     
  3. great recipe. only got 4 stars b/c husband didn't like very much. my 4yo and i loved this recipe. pan fried the chicken with garlic powder, pepper and salt, then kept warm in oven. use same pan for the sauce, added diced onion to the garlic and butter. add tsp cornstarch with the 1/2 and 1/2. doubled the sauce, as recommended. turned out great. will make again really soon!
     
  4. This was delicious. I actually baked two chicken thighs with seasoning then put on top with angel hair pasta mixed in sauce. I let it reduce till it was thicker. I added 2 tsp dried basil as I didn’t have fresh, will probably add less next time it was a little strong. Didn’t have dried tomatoes either, so added half a ripe tomato diced small. Used chicken broth powder in hot water because I don’t keep broth around. Next time won’t add additional salt because of it. I know that’s several substitutions but it’s what I had. It came out so good. Just a touch salty with a little too much basil but those were substitution problems. Will definitely make this again!!!
     
  5. This is such a delicious recipe! My only change was doubling the amount of sauce the second time I made it because I wanted more of it. Other than that, it is perfect!

  1. Absolutely wonderful. I love this dish at the restaurant, so I added the mushrooms (sliced baby bella, added with the sundried tomatoes), used bowtie pasta in place of the angel hair, and sliced up the chicken into smaller pieces (used a garlic salt pepper combo for seasoning). It was delicious! One person in my family who did not like the dish @ the restaurant, loved this. I also used this recipe as part of a multi-course meal that was required to graduate culinary school, and the judges loved it! Will continue to make this with pleasure!

  3. Fantastic! I used olive oil instead of butter to make the sauce, as well as my favorite heavy cream substitute. I also omitted the salt and added chopped portabella mushrooms and spinach to make it a one-dish meal-- it was absolutely wonderful! The sauce was a little salty for me, so next time I will be sure to use reduced-sodium chicken broth. Thanks for a keeper!
     
  4. Love Love Love it, although i subbed 1/2 and 1/2 for the heavy cream and double the sauce. I also pounded the chicken thin and coated it with a mixture of garlic powder,black pepper and salt then fried it and sliced it. I stuck the chicken into a warm oven while i prepared the sauce in the same pan, using the pan juices from the seasoned chicken. it added an extra depth of flavor IMHO! AND I only had to dirty one pan! I also subbed fettucine for the angel hair pasta its what we had on hand! Its a regular on our rotation! Thank you!
     
  5. Loved it. My boyfriend said it was perfect, which is a big accomplishment since he comes from an Italian family. I subbed half & half for heavy cream & used sun-dried peppers & green onions instead of the tomatoes. I do agree that it needs more cream or less chicken, but that is easily adjusted next time.
