Magda's Chicken Noodle Vegetable Stoup

"While there is a list of ingredients with this soup that is as thick s stew (hence the name stoup), you can substitute whatever you have in the fridge. In Czech, this kind of dish is called "co d?m dal" or "what the house gave" and its intent is to clean out your fridge of all those veggies that are about to go bad. This stoup, as with many soups and stews, is even better the next day. The more you make, the more lunches you get out of it!"

  • Heat olive oil over medium heat.
  • Add the onions and saute until transparent.
  • Add garlic and herbs.
  • Stir and saute one minute.
  • Add cut up vegetables and cook for several minutes.
  • Add chicken stock slowly, stirring to pick up all the bits of flavor that have stuck to the bottom of the pot.
  • Add salt and pepper and bring to a boil.
  • Cook for 20 minutes.
  • Add chicken cubes and noodles.
  • Cook until noodles are tender (about 3 to 4 minutes).
  • Serve with Cheater's Garlic Bread:

  • Butter slices of bread, sprinkle with garlic powder and put into toaster oven to toast (do not try this in a conventional vertical toaster!).
