Pop up Pizza Casserole

"My daughter adores this recipe. She often requests it be prepared when her friends are coming over. I sometimes add pepperoni slices on top of the cheese and mushrooms in the meat mixture."

directions

  • Brown meat.
  • Add all but cheese.
  • Simmer 10 minutes, stirring occasionally.
  • In a small bowl, beat the milk, oil and eggs for 1 minute on medium speed.
  • Add flour and salt, beat 2 minutes more on medium speed until smooth.
  • Pour hot meat mixture into a 13x9 inch pan.
  • Place cheese on top.
  • Pour batter over cheese, covering filling completely.
  • Sprinkle with Parmesan cheese.
  • Bake 25-30 minutes at 400 degrees.
  • Serve immediately.

  1. Michelle, my kids loved this. I did make a few slight additions. I used 1 t. minced garlic, 1 t. dried oregano, and added salt and pepper to the meat mixture. I think next time I will do as you suggested and add pepperoni and mushrooms. This made a great weeknight easy to make meal Thanks.
     
  2. Boy did the kids like this!!I didnt have a jar of spagetti sauce so I used a can of diced tomatoes and a 2 small jars of tomato sauce and just a little pizza spice.This was a satisfying meal that will be had again!Thanks Michelle!

  1. EXCELLENT! It wasn't stated what size spaghetti sauce to use, so I used 14 oz., was really glad I didn't use one larger. Got distracted w/my DS's and used mozzarella instead of parmesan. Had great results it cut and was served 'cleanly' not at all soupy. It was just a little to mild for my taste so added crushed red pepper for my DH and DS's nothing extra added and they loved it.   2. Michelle, according to my son, this was two thumbs up, and totally awesome! I made this dish yesterday for my son to take home with him. I used half ground beef and half ground veal, added some mushroom and way more garlic than called for, also a couple of tablespoons of grated Parmesan cheese. I added some hot pepper sauce to the ground beef mixture also. For the popover batter I added 1/2 tsp cayenne pepper, and made it with half and half cream instead of milk. This is a great casserole and very versatile. I'll be making this again. Thanks for sharing....Kittencal:)
     
  3. YUMMMMMMMY! What a great quick and easy dish. Instead of ground beef I used spicy turkey sausage. I will omit the pepper next time, a little too over powering. I separately sauteed the onion with some chopped mushrooms and then added that combo to the meat mixture. I also mixed in some turkey pepperoni, as well. Absolutley fantastic and the little bit of leftovers that made it to the next day were even better!
     
  4. This was pretty good! I used reduced fat italian sausage instead of the hamburger. My DH and I both agreed that it was too salty. I think next time I will skip the salt in the batter, and look for a low sodium pizza sauce.
     
  5. Really good. My teenagers particularly enjoyed this. I used Italian sausage instead of beef and added a little pepperoni I had. The topping is excellent.
