Cranberry Nut Energy Bars

"These are a great alternative to store bought cereal and granola bars. They pack well and make an easy, quick snack or breakfast on the go. I like to use dried cranberries, but you could substitute any soft dried fruit like cherries or apricots."

directions

  • Preheat oven to 350°.
  • Toast oatmeal on large baking sheet 13 x 9 pan or 15 x 10 jellyroll pan for 10 minutes.
  • Add raisins and Rice Krispies and toast another 5 minutes.
  • Add peanuts and dried fruit and set aside.
  • In a large pan, melt butter, peanut butter and marshmallows over low heat.
  • When smooth and combined, add oatmeal mixture.
  • Stir to coat.
  • Press firmly into 9x13 pan.
  • Cool and cut into 20 bars.
  • Note: I use a large dutch oven type pot to make mixing easier.
  • You can also reduce or eliminate butter if you want to lower the fat.

  1. This is the first granola bar that I have ever made, but it was relatively easy. I really like the cranberries in it. It was a success!!
     
  2. Wow! Good, good, good! We substitute sunflower butter and roasted, salted sunflower seeds made in a peanut-free facility for the peanut products; soy margarine in place of the butter (allergies). Otherwise we make it as written, with cranberries. Word of caution: I'd recommend toasting things on the _bottom_ rack of the oven. I used the top rack the first time and had smoke billowing through the kitchen! To simplify things I use non-stick aluminum foil in the 9x13 pan, and use the bottom of a measuring cup sprayed with oil to squish the hot, sticky marshmallow mixture into the pan. Thanks for a nice recipe we use all the time!
     
  3. These were great! I used some tropical mix dried fruits as well as cranberries and used a mix of nuts instead of the peanuts. I also added a touch of allspice and toasted the nuts along with the cereal and raisins.
