Baked Sweet Red and Yellow Pepper Wedges

- 2 red bell peppers
- 2 yellow bell peppers
- 1 sweet onion, finely chopped
- 1 can crushed tomatoes, drained
- 1⁄4 cup fresh parsley, chopped
- 1⁄4 cup olive oil
- 2 tablespoons olive oil
- 3 tablespoons pine nuts
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1⁄4 teaspoon pepper
- 1⁄4 cup fresh breadcrumb
directions
- Preheat the oven to 375 degrees.
- Lightly oil a 13x9 inch baking pan.
- Trim tops off peppers; discard the stems and finely chop the rest of the top of the pepper.
- Cut each pepper lengthwise into sixths.
- Place wedges, but side up, in oil pan; set aside.
- Combine chopped pepper tops, onion, tomatoes, parsley, 1/4 cup olive oil, pine nuts, garlic, salt and pepper in a medium sized bowl.
- Spoon equal amounts of mixture into each of the pepper wedges.
- Bake wedges for 25-30 minutes or until just tender.
- Sprinkle bread crumbs and 2 tablespoons oil over all.
- Bake 10 minutes longer.

Delicious! A KEEPER! Good cold, room temp or hot. I used halved long sweet banana peppers, enough to fit in a 13 x 9 pan. Left out the pine nuts. Added 1/2 lb. of hot Italian sausage to the leftovers; that was terrific. I will do that next time at the start. As others did, I also cooked longer to soften the peppers. This would also be a good pasta sauce as well as a side dish. Or, meatless, a a starter. And it looks really appetizing. Geema, many thanks for this versatile recipe . . . Janet

I don't think they add much to the dish, I will leave them out next time. I also cooked longer than indicated so that the peppers were super soft.

I am basing this review on the mixture combo because I could eat that with a spoon! Absolutely delicious!!! I did top some little Italian breadcrusts with the mixture and enjoyed that completely. However I took it upon myself to add some cooked ground turkey breast to the final mix in order to make it a main course. I would have enjoyed the finished product much more without it. <p>Life often interupts our comfortable routines in very unexpected ways and in the past three years I've certainly faced some challenges. As a health nut who ate mostly vegetarian I was beyond shocked to discover that I was diabetic. <img title=Yell src=../tiny_mce/plugins/emotions/img/smiley-yell.gif border=0 alt=Yell /> I shouted and rebelled and cried. But the good news is that I can control my glucose levels simply by eating very low carb. What a complete turn around it was to pass up all my high carb vegetarian foods like grains, and veggies and embrace meat! <img title=Surprised src=../tiny_mce/plugins/emotions/img/smiley-surprised.gif border=0 alt=Surprised /> I've adjusted to this limited diet and thanks to Zaar can eat a nice variety of healthful meals.</p>
<p> The next challenge was a freakish fall I took while in New York with my daughter that left me paralyzed and in much pain. I thank God that I am so much better today after more than two years recovery, with total mobility and just some minor pain in my arms and hands. Cooking and communicating here was not really on my priority list. But, I am back in action and ready to cook, take photos, and enjoy this wonderful community of friends.<img title=Laughing src=../tiny_mce/plugins/emotions/img/smiley-laughing.gif border=0 alt=Laughing /></p>
