Sloppy Joe for One

ingredients
- 2 ounces tofu crumbles (I like Smart Menu "gimme lean")
- 2 tablespoons catsup
- 1 teaspoon mustard
- 1 teaspoon Worcestershire sauce
- 1 teaspoon vinegar
- 1 teaspoon brown sugar (or 1 packet Stevia sweetner)
- 1 dash salt
- 1 tablespoon chopped onion
directions
- Cook the crumbles in a skillet with the onion and the salt.
- Combine the other ingredients in a microwave-safe bowl and nuke on high for 30-60 seconds.
- Mix the crumbles and onion with the sauce.
- Serve in a whole-wheat pita, on a tortilla, or whatever.

I baked some chicken breasts today to freeze for future use. I remembered that I had filed this recipe yesterday in my cookbook for Condiments & Sauces. Whipped it up in a flash today and added diced chickden. Rolled it in a tortilla. This made a VERY quick lunch, and it's VERY tasty. I'm going to make up a batch of this to freeze in ice trays, then store in the freezer. You can't beat this for ease and taste....not to mention versatility. Thanks!

Wow this was fabulous. I had never had a sloppy joe before and can't belive what I was missing. My husband who is a huge sloppy joe fan "LOVED" this! I used ground beef instead of tofu, minced onion in place of fresh and regular sugar instead of brown! Thank you for adding a staple dinner to my home menu!

Hi There, I just wanted to point out that Worcestireshire sauce is NOT vegan, it is made with anchovies. I know of course that there are lots of people who will make this who are not vegan, 'cause it sounds flippin delish anyhow, and I think I will make it for dinner, but for those who are vegan such as myself, I wanted to point that out. There is a vegan w. sauce available, and you can probably pick it up at your local health food store. Cheers!

I'm a health-conscious vegan with a serious sweet tooth. A lot of my first recipes on here weren't vegan, but they're family favorites that can be easily adapted. I'm broadening my horizons and learning how to a) cook easy but tasty food, and b) be patient and cook more time consuming dishes.

I can usually be found curled up working on a proof or a good book.
My biggest pet peeve is too much sugar in prepared food!
