Carrots with an Apple Glaze

  • 1 tablespoon butter
  • 1 (16 ounce) package peeled trimmed baby carrots
  • 1 cup unsweetened apple juice
  • 1 teaspoon honey
  • 1 tablespoon minced green onion top

directions

  • Melt butter in large nonstick skillet over medium-high heat.
  • Add carrots and sauté until carrots begin to brown slightly, about 8 minutes.
  • Add apple juice and honey and bring to boil.
  • Reduce heat and simmer until carrots are tender and liquid reduced to glaze, stirring occasionally,about 15 minutes.
  • Season to taste with salt and pepper.
  • Transfer to bowl and sprinkle with green onion tops and serve.

  3. I made this for Christmas dinner, it was delicious! I was surprised how little was left. I used cornstarch to thicken it a bit because I tripled the recipe. I also added a sprinkle of dill weed for colour. Thanks for this great new way to serve carrots.
     
  4. Yummy is right! I chose the smallest carrots fresh from our garden & sliced them in half lengthwise. Since this was a spur of the moment dinner selection & I didn't have ant green onions, I added 1 tsp of dried chives at step 3. Thanx Geema!
     
  5. What a yummy way to fix carrots! I used regular carrots cut on the diagonal, in 1/2 inch chunks, and I skipped the green onion. They glazed up real nice and tasted divine! Thanks Geema!

<p>Life often interupts our comfortable routines in very unexpected ways and in the past three years I've certainly faced some challenges.&nbsp; As a health nut who ate mostly vegetarian I was beyond shocked to discover that I was diabetic.&nbsp;<img title=Yell src=../tiny_mce/plugins/emotions/img/smiley-yell.gif border=0 alt=Yell /> I shouted and rebelled and cried.&nbsp; But the good news is that I can control my glucose levels simply by eating very low carb.&nbsp; What a complete turn around it was to&nbsp;pass up&nbsp;all my high carb vegetarian foods like grains, and veggies and embrace meat!&nbsp;<img title=Surprised src=../tiny_mce/plugins/emotions/img/smiley-surprised.gif border=0 alt=Surprised /> I've adjusted to this limited diet and thanks to Zaar can eat a nice variety of healthful meals.</p> <p>&nbsp;The next challenge was a freakish fall I took while in New York with my daughter that left me paralyzed and in much pain.
