- 1 1⁄2 lbs ground beef
- 1 tablespoon olive oil
- 2 medium onions, chopped
- 2 -3 garlic cloves, minced
- 2 1⁄2 cups chopped red peppers (or both) or 2 1/2 cups yellow peppers (or both)
- 1 tablespoon ground cumin
- 1 tablespoon paprika (hot if possible)
- 1 tablespoon chili powder
- 2 teaspoons white sugar
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon ground cloves
- 2 (14 1/2 ounce) cans diced tomatoes
- 1 (15 ounce) can kidney beans, drained
- 1 (15 ounce) can black beans, drained
- 1 (15 ounce) can cannellini beans, drained
- 1 (6 ounce) can tomato paste
- 2 tablespoons balsamic vinegar
directions
- Brown ground beef over medium high heat in a large, deep frying pan.
- Drain off fat and set aside.
- Coat a large dutch oven with cooking spray and place over medium high heat.
- When pan is hot add the olive oil and cook the onion and garlic until the onion is tender, then add the peppers and cook until tender.
- Season with the cumin, paprika, chili powder, sugar, salt and cloves.
- Stir in the canned diced tomatoes, and the drained cans of beans.
- Add water to cover all.
- Bring to a boil and then stir in the meat and tomato paste.
- Bring to a boil and then simmer 30 minutes.
- Remove from the heat and stir in the vinegar.
- May serve with chopped fresh cilantro as decorative topping.

This was great. I made it for a small dinner party and they all liked it a lot. I subbed butternut squash small dice for the yellow pepper and after simmering, I added more salt, some oregano and a liberal teaspoon full of granulated garlic. The flavors are great! Next time I'll add more minced garlic in the beginning. Thanks for the keeper!

this chili is awsome! i used hot paprika and mexican chili powder but found it needed some tobasco for my taste. i also increased the salt to 3tsps kosher and a 1/4 cup of miced garlic (this is a big dish). when i added the cloves the smell was so strong i was afraid i ruined the dish because i don't like cinnamon and meat but it blended in nicely and accentuates the natural and added sugars in the dish. the final addition of balsamic vinegar creates a wonderful mild sweet and sour flavor. if you don't add the balsamic vinegar you will be making just another chili (so don't bother).

A big fan of chili and this one is terrific. Ended up adding just 1 pound of lean ground beef into the pot - just a personal preference about the ratio of meat and beans. Ended up adding a 1/2 teaspoon of cinnamon and a pinch of allspice to boost that island flavor. The balsamic vinegar was a really nice addition and set this apart from typical chilis.

I made this on a snow day here in Texas. I was able to make a delicious chili with what I had on hand. I made a few adjustments. I used one can of rotel and one can of diced tomatoes instead of two cans diced tomatoes, I used 1/2 tablespoons of cumin, istead of onefull tablespoon. I used the black beans as suggested, but instead of kidney and cannellini, I used a can of kernal corn and great northern beans, and I only had green bell peppers to use instead of red or yellow. It was delicious. Also, I ommitted the vinegar as my husband is not a big fan of vinegar. With some cornbread on the side this was a delicious meal, a little spicy, but not too heavy. Basically the seasonings taste great and what beans you use are just personal preference.

It is such a busy, fast paced job that there are times I come home drained. I have learned to make fast easy meals from Recipezaar and save the more complicated ones for my days off. My husband is in the Army and was away for a year and now is stationed so far that he comes home on Friday nights and goes back Monday mornings. So I always like to have some nice meals waiting for him. <br />I always say it is like we are dating again. Since we only see eachother on weekends I try to impress him with a nice homecooked meal when he gets home. He usually eats at the mess hall. Other nights we will go out to dinner and a movie. I have one son who has been my Rock of Gibraltar through this. so some of meals are geared towards his tastes. He works and goes to college so I try to sneak a special meal in for him when he is home. Which isn't too often. I enjoy trying new recipes and sharing some of mine.</p>
