Spanish Rice Casserole

"This is easy and very tasty, it's good served hot or at room temperature for a side dish, or as a main meal. All ingredients can be adjusted to taste. Add in finely chopped jalapeno pepper or crushed chili peppper for some heat."

  • Set oven to 375 degrees.
  • Grease a 2-quart casserole dish.
  • In a large skillet, brown the ground beef over medium-high heat; drain the fat, and transfer beef to a large pot over medium low heat.
  • Stir in onion, garlic green pepper, tomatoes, water, rice, chili sauce, salt, pepper, brown sugar, cumin and Worcestershire sauce.
  • Let simmer for about 30 minutes, stirring occasionally, then transfer to a 2-quart casserole dish; press mixture down firmly.
  • Sprinkle with grated cheddar cheese.
  • Bake for 10-15 minutes, or until cheese is melted and bubbly.
  • Garnish with fresh cilantro if desired.

  1. I have a saved recipe for Spanish rice casserole. I wanted to change the recipe to double size--8 servings--and add a note to myself. I can't figure out how to save the updated version. I always get the original when I pull it from my saves. Is there a way to have the notated recipe ?

Kittencal, I had to change this recipe and don't like to make major changes to your recipes, however I did not have chili sauce so I used some of your enchilada sauce Recipe #168653 I had made for another recipe and frozen. Otherwise I followed the recipe and added the fresh cilantro and green onions on the top of the casserole. My BF loved it! It turned out great. Thank you and next time will make sure I have chili sauce.
     
  2. Did this Recipe, I really enjoyed it! So much so the 2nd time I made it I left out the cheese and used it in roasted stuff bell peppers.
     
  3. Used 1 1/2 of hamburger. Added 1/4 cup of chunky salsa to compensate for the additional meat. Other than that followed to a T. Thanks.. definite keeper.

  1. I like to cut the amount of ground beef in half and add some green lentils and increase the liquid slightly. 1/4 cup green lentils 1/2 cup water Put lentils and water in a covered sauce pan. Bring to a full boil. Reduce heat and simmer for 20 minutes. Add to beef and tomatoes and rice mixture.
     
  2. This was a great midweek family meal. I served mine with shredded lettuce and diced tomatoes. I replaced the chili sauce with tomato puree and chopped jalapeno. I added the onion, peppers and garlic in step 3 and used a very lean beef mince. Another winner Kitten thanks for sharing.
