- Add pork, sprinkle with the salt and pepper.
- Cook, and stir constantly for 2 minutes.
- Add peppers, onion, garlic, cumin and fajita seasoning, continue to cook until the vegetables are crips-tender, about 3-4 minutes.

- I like to put the meat and tortillas in a platter and bring it to the table, and let everyone make up their own.

This is a perfect recipe if you are looking to start the New Year off light, healthy, & easy. Pork is tender & lime juice adds a twist of flavor. I used ElPaso fajita seasonings and mini sweet peppers instead. Chopping could be done the night before and dinner would be ready in minutes the next day, but same day prep is quick also.

I've never made fajitas before. These were good, but a lot of work for a weeknight dinner (chopping tomatoes, lettuce, peppers, onions, etc.) Also, I could not find the Fajita Magic seasoning, and a co-worker told me that she had tried all of the other brands and didn't like any of them, so I made my own from the suggested RZ recipe. I don't often order fajitas, so I don't know if they compare, but I thought it could use a little more zip. I made http://www.recipezaar.com/Spicy-Guacamole-36401 to go with them, and that gave it some zip. I WOULD make these again because I think it's a great way to use pork, but maybe I'd marinate it first?
