Mini Meatballs

40-48 meatballs
ingredients
- 1 lb ground beef
- 1⁄4 cup dry breadcrumbs
- 1⁄4 cup water
- 2 tablespoons chopped fresh chives
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
directions
- Combine all ingredients in a bowl and mix really well.
- Roll meat into 1" balls- at this point, you can either continue or freeze them for later use, providing your beef wasn't pre-frozen.
- Arrange the meatballs on a rack over a foil-lined pan (for easy clean-up).
- Bake in a 400ºF oven for about 10 minutes, or until meatballs are browned- you can also freeze them at this point, or use them in other dishes (or just eat them plain).

This recipe is "geat" and "flexible" for all the times you need or want a mini meatball. DH is a diabetic and these work as a lower carb meatball for him. I do my best to keep a bunch in my freezer. I have made these mega times. The part I love about this recipe is that I can add the spices I want to make them for a multi types of recipes. The meatballs are juicey, not dry. They freeze well. What more can you ask or want. Thank you for a keeper and a favorite for us.

My grown son is such a picky eater! He has been like this since he has been a little boy. Throughout the years, I continue to introduce him to many different foods, but he simply refuses to even take a little taste. After reading multiple recipes on different websites, I decided to make these meatballs, wondering if he would even try them. Well, he did. He said they were FANTASTIC and that I needed to make them AGAIN! WOW! ... I finally found a winning recipe for meatballs and they are so simple to make!

This recipe makes the best little meatballs ever!! I substituted bread crumbs with quick cook steel cut oats (because I'm avoiding bread!) And then soaked them in the water. Added more seasoning too (coriander, onion powder, garlic powder and smoked paprika)...scrumptious! My grandbaby doesn't eat meat that much but she loves these!!! She gobbled them up and wanted more!...way thumbs up!!
