Chicken & Waffle Breakfast Nachos

Chicken and waffles are perfect partners, just like bacon and eggs. So what happens when you combine nachos (my favorite happy hour snack) with that classic Southern favorite? You get your new favorite breakfast or brunch dish. Instead of chips as the base, these nachos are made with a bed of savory cheddar scallion waffles.

Whip up a homemade waffle batter — don’t worry they won’t be sweet — and fold in shredded cheese, scallions and jalapeño for a nice little kick. Once the waffles are cooked, cut them into bite-sized pieces and place in a platter or individual bowls.
