  • Preheat oven to 300 degrees F. In a large skillet add oil and heat until hot. Place roast in skillet and sear on both sides.
  • Using a large roasting pan add one onion and remaining ingredients. Transfer browned roast to roasting pan and top with the second onion.
  • Cover and bake for 3 1/2 to 4 hours basting the roast every hour with juices. If liquids begin to boil away add more coffee or soy sauce as needed. Pan juices can be used to make gravy but do not add salt.

  1. This is a very tasty pork roast recipe, and the drippings make a delicious gravy without a lot of other seasonings added. When I saw that Susie D had previously reviewed this it made me smile, since I am making this while on Susie's World Tour 2019, so I cooked mine in a bag, too, but used the conventional oven.   2. I made this roast for our Sunday dinner. We really enjoyed the flavour the coffee and soy added to the meat. I was using a lean and small Pork Loin roast so reduced the time considerably because I wanted to be able to slice not shred the meat. Thanks for posting this! Made for World Tour 2019
     
  3. I adapted this to use in the crockpot for easy weekend cooking. I used a crockpot liner bag, added the ingredients, set it on high, and was rewarded with delicious roast. It couldn't have been easier. We liked the flavor imparted by the coffee and soy sauce and the liquid in the crockpot made wonderful gravy. I used leftovers to make a biscuit topped pot pie later in the week. Thank you for sharing the recipe!
     
  4. I don't have a roasting pan so I made this in an oven bag. The only thing I added was a tablespoon of flour as called for in the oven bag. I left the salt out, because even the reduced sodium soy sauce is high in salt. It turned out perfect. Flavor was good, but I may add ground pepper and extra garlic next time.
