  • In a sealable microwave-safe container, combine the apples with all other ingredients.
  • Close the lid, leaving one corner of it open to allow steam to escape. Microwave on high power for 10 minutes.
  • Using a hand blender or potato masher, blend to desired consistency. Serve hot immediately or chill for later use.

  1. Pretty good stuff. I think this is the first time I've ever made apple sauce from scratch. I made it exactly as written, opting for cognac over brandy. (I couldn't really taste the effect of the cognac, though.) It made a fairly large amount, but I enjoyed the last bowlful days later. Like another reviewer, however, my apples weren't too mashable with a hand masher, and I did microwave the recipe for 10 minutes on the highest power level. After lots of effort, my results were still pretty chunky, and I really prefer a much smoother apple sauce. Despite my texture preference, the taste was still great. I just bought an immersion (aka stick or hand) blender, so I'll probably try this recipe again and use that tool.
     
  2. Excellent and fun to make, I probably needed to microwave my apples a little longer, I couldn't really mash them I ended up putting them in the blender.
