  • Mix dry ingredients together. For a bulk mix: double or quadruple the mix. Put mix in a Ziploc bag.
  • Label mix bag with cooking instructions.
  • To make 1 batch of muffins measure out 2 cups of Dry Mix.
  • Preheat oven to 350°F.
  • Mix all ingredients together.
  • For banana chips or apple slices, crush and pre soak in 1/4 c more water let fruit stand until softened before baking.
  • Spray oil on muffin tins.
  • Fill muffin tins with batter.
  • Bake at 350°F until golden 10-15 minutes.

  1. This is a great recipe. I love it because it is so versatile. The first time I made it I used pumpkin and chocolate chips. Delicious. The next time I pureed some white navy beans and added them in along with raisins. Amazing....nobody in my house was any the wiser that the secret ingredient in their muffins was beans! A great way to slip in some extra fibre. I look forward to experimenting with this recipe and finding new ways to make it.<br/>Edit to add made this again yesterday using some oranges that I pureed in my blender along with orange zest and white chocolate chips. Super good. Made it as a loaf....45mins at 375 was good.
     
  2. THis is the best muffin recipe. I look in my pantry and fridge and use what I have to create that day's muffin. I too have found that 20-25 minutes works better with my oven depending on what I use in the wet mix. I tried the peanut butter and it makes a heavey muffin/ giant soft cookie. Dad really liked those. The favourite for the kids is anything with chocolate chips. I find that a half cup is enough. A full cup of chips can be too much (especially when you have four small faces to clean). I look forward to trying other variations that I can come up with!
     
  3. These muffins are great! I used applesauce in my wet mix and used chocolate chips. I was really surprised that the texture was so good--usually with so little oil I find that the texture gets a little gummy, but these were just right. I baked mine for longer than the 10-15 minutes, but it could just be my oven. I will be definitely be using this recipe in the future, thanks!
     
  4. Awesome recipe! I made this about 10 times. Always turns out great! The best thing about this recipe is that you can use any combination for the wet mix. My personal favorite is half carrot and half bananas. I always reduce sugar in half. I love this wholesome recipe!
