12 Thumbs up Banana Bread

"So says my granddaughter. This is my daughter's recipe and I have to agree it is pretty wonderful. I found it written on a piece of paper and have snitched it to record here to make sure it doesn't get lost. This one is a keeper! Best to make two loaves because one won't last long out of the oven."

directions

  • oil bottom only of 9x5 loaf pan with coconut oil.
  • preheat oven 350.
  • in first bowl combine sugar & butter.
  • place eggs and half and half into a small jar and shake to break up eggs.
  • pour over and stir into sugar/butter mixture
  • add bananas.
  • in second bowl combine flour, baking soda and salt.
  • gradually add flour mixture to banana mixture stirring until just incorporated.
  • pour into prepared loaf pan.
  • poke jumbo raisins in rows across top.
  • place in 350 oven on second rack for 75 minutes.
  • at one hour mark, poke a butter knife down middle @ cracked area.
  • the doughy part should only seem to be at the bottom.
  • cover with foil and cook 15 more minutes or until timer goes off.
  • meanwhile make the glaze by combining water, powder sugar and butter to a drizzle consistency.
  • remove bread and run a butter knife around edge and jiggle to ensure it is loose in the pan (it should not stick to sides of pan).
  • get a plate ready, cover top of loaf with oven mitt.
  • dump top side down into oven mitt and place plate on bottom of loaf and turn over to plalce bread on plate.
  • sprinkle top of bread with angel coconut and drizzle with glaze.
  • serve warm and get a smiling 12 thumbs up rating at first bite!
