Meat Loaf
- 1 1⁄2 lbs ground beef
- 1 egg
- 1 cup breadcrumbs
- 1 small onion, chopped, to taste
- 1 1⁄4 teaspoons salt
- 1⁄4 teaspoon pepper
- 5 3⁄8 ounces tomato soup

Sauce
- 5 3⁄8 ounces tomato soup
- 1 cup water
- 2 tablespoons vinegar
- 2 tablespoons mustard
- 2 tablespoons brown sugar
directions
- Mix meat loaf ingredients well in a 1 1/2 to 2 quart baking dish.
- Put meat loaf in 350 degree oven and begin cooking while you prepare the sauce.
- Combine sauce ingredients, mix well and pour over meat loaf that is in the oven cooking.
- Cook for a total of 1 1/2 hours.

YES a meatloaf my husband enjoyed! This is high praise. He hates meatloaf but this was really good. I love the little bit of tang in the sauce. Not too much, just enough to make a difference. I didn't have an onion and used Italian seasond breadcrumbs. When I first put the sauce together I thought it was too watery and was not at all convinced it would be good but I was wrong, it was perfect. It was also cooked in an hour but I left in the oven while I prepared the rest of the meal. I simply pat it into a loaf and placed in the center of a baking dish. I served mashed potatoes and peas on the side. Next time I may try cutting the potatoes into chunks and baking them in the pan with the meatloaf. This was a wonderful meal and I will be making this again and again. Thanks so much for posting this recipe.
