  • 12 cup margarine (approx 1 stick)
  • 34 cup chopped green pepper
  • 13 cup onion
  • 3 eggs
  • 17 ounces whole kernel sweet corn, with liquid
  • 17 ounces cream-style corn
  • 8 12 ounces corn muffin mix
  • 1 cup shredded cheddar cheese

Directions

  1. Pre-heat the oven to 350°F.
  2. Saute green peppers and onions in margarine.
  3. Combine the all ingrediants EXCEPT for the cheese and mix well.
  4. Pour into a greased two quart casserole dish.
  5. sprinkle with cheese and bake for 45-55 minutes.
  6. let sit for 5 minutes before serving.
