  • Spray a deep skillet with nonstick spray coating. Preheat pan over high heat. Cook chicken in hot skillet, stirring, for 3-5 minutes, or until no longer pink.
  • Reduce heat. Add tomatoes and their juice, low-sodium chili sauce, green pepper, celery, onion, garlic, basil, parsley, crushed red pepper, and salt. Bring to boiling; reduce heat and simmer, covered, for 10 minutes.
  • Serve over hot cooked rice or whole wheat pasta.
  • * You can substitute 1 lb boneless, skinless, chicken breast, cut into 1-inch strips.
  • ** To cut back on sodium, try low sodium canned tomatoes.

  4. This is a terrific recipe. I have substituted Hellman's mayo for the chili sauce sometimes and I also add slivered almonds or sliced water chestnuts just for a little different texture. I have served this many times and received lots of compliments.
     
  5. Really quick and easy. I added some creole seasoning and used boneless chicken thighs. Served over brown rice. Husband said it is great!

  1. Really quick and easy. I've made this twice now. The first time I followed the recipe. The second time I substituted some zucchini for some of the celery and added some kidney beans. Both times it was delicious.
