  • Heat the oil in a large saucepan and saute onion, garlic, chilli and cumin until fragrant and soft.
  • Add bell pepper and mushrooms. Saute until soft.
  • Add both types of beans and the tomatoes. Bring to the boil then reduce heat to low and simmer for 15-20 minutes.
  • Serve with warm tortillas and other fillings at the table for people to wrap into burritos.

  1. This is a great recipe. I thought for taste it probably deserved 4.5 stars, but for convenience and nutrition it's a 5 star all the way. My DH and I have been trying to eat healthier and shed a few pounds and this recipe gave me a really good tasting and filling dinner for less than 300 calories. I used fire roasted tomatoes instead of regular diced tomatoes and 100 calorie multigrain tortillas with 1/2 oz. of cheddar and lots of lettuce. I also used fat free yogurt instead of sour cream with a little salsa for garnish. This recipe uses items I almost always have on hand, is inexpensive to make and doesn't taste like diet food--what could be better than that!? Thanks for posting peachy pie.
     
  2. Delicious and fairly easy, with my 20 month-old that is important. Husband loved it and didn't even notice a lack of meat. The Forementioned 20 month-old devoured it. I included a little melted cheese and it was fine.
