3 Melon Salad With Fruit Dressing

"I love fruits, especially melons and this recipe is a keeper. I got the recipe originally from an old community cookbook that was published in the late 80s, that my mother sent me. Thanks mom. *Please note* the chilling time is not included in cooking time."

  • Add all the prepared melons to a bowl.
  • Sprinkle sherry over the melons and chill in the fridge, covered until ready to use. The melons taste better the longer they are chilled.
  • Now we make the Fruit Dressing, it is a slightly sweet and sour dressing and it compliments most fruits.
  • In a medium pan, beat together the sugar and egg. Add all the remaining ingredients except for the whipped cream.
  • Cook, stirring constantly until it thickens slightly. Cool and chill.
  • When ready to serve, whip the cream and fold into the mixture.
  • Top your fruit salad with the dressing and garnish with the mint sprigs.
