directions

  • Combine biscuits and butter.
  • Press into a foil lined 8" pie plate.
  • chill.
  • combine condensed milk, lemon juice, rind, and egg yolks.
  • place in crumb crust.
  • beat egg whites until stiff.
  • gradually add the sugar.
  • beat until sugar has dissolved.
  • spoon or pipe meringue over the lemon filling.
  • bake in a moderate oven (350F-375F) for 15 minutes or til golden.

  1. This was a good change from my normal lemon meringue pie , I used a graham cracker crust (I'm in the US and can't get the arrowroot biscuits). The only change I really made was I doubled up on the meringue because I love meringue. ;) Very smooth creamy filling , not too sweet, not too tart , and FAST to put together!!! Thanks for posting!!
     
  2. I was very happy with this. I was looking for something a little different in a lemon meringue, and bookmarked this to try today.<br/><br/>I used a graham cracker crust because that's what I had. I wasn't sure how the condensed milk would work with the lemon juice, and wasn't sure it would set up well enough in only 15 minutes' baking time, but it did great!<br/><br/>SO much less "fiddly" than the stovetop cornstarch/sugar/water method. This will be my go-to lemon meringue from now on.
     
  3. My husband wants this to become a Thanksgiving tradition he liked it so much! I did use another meringue recipe that had 3 eggs and some cream of tartar, just for a little more on top.

I have been intrigued by this recipe for awhile and had a perfect occasion to try it out, when I really just had a about 30 min.M I did buy some US baby arrowroot cookie but found it to have a bitter taste to them and so I used vanilla wafers instead. I used about 1 1/4 cup plus 3 tbs butter. I also used an extra egg white. This pie turned out FABULOUS and cut really nicely, after cooling for 20 min. The filling flavor was just the right amount of sweetness, too. My father in law pronounced it "FANTASTIC," too. Thanks Orianna, for posting. Roxygirl

  2. 5 thumbs up to this amazing recipe. So very easy and extremely delicious. Caution, this pie is addictive!! It may be very rich for some, but it sure did the trick curing my "sweet tooth" Instead of arrowroot biscuits, I used "tennis" biscuits and melted butter - I also doubled up on the meringue. Highly recommend this recipe.
     
  3. Oriana, this is the *best* Lemon Meringue Pie I've ever had - better even than the famous Shingle Inn Lemon Meringue Pies. It was super easy to make. I used Nice Biscuits instead of Milk Arrowroot but otherwise followed your directions exactly. It was great for me because I'm not fussed on pastry - either making it or eating it. So, I got a crunchy crust, a lusciously smooth, thick super-lemony filling, and a thick, marshmallowy top! I was a bit anxious about keeping it in the fridge overnight, but it kept perfectly without weeping. Honestly, I am just over the moon about this recipe. Thank you SO much for posting it.

Well I have two gorgeous kids a 2 year old boy(soon to be 3) and a 9 mth old girl, so I have been very lucky to have one of each! I remember growing up and eating the most yummiest food that my mum would cook for us so I am carrying on the tradition and starting my own favourite recipes for my family to grow up on and this is where this great website comes in! I love to travel, go to the beach, animals, going to theme parks, zoos etc, art and crafts the list goes on. I am currently a stay at home mum living with my partner and enjoying every minute of bringing up my beautiful babies.
