"This is another variation of an easy multi-can soup that is designed to be made the a day ahead of serving. Very hearty and only gets better the more times the pot is reheated. Spicy for a little bit of a kick!"

  • Brown ground beef with onion in large soup pot, drain any fat from cooked beef and place back in pot.
  • Add water, minestrone soup, Rotel, pinto beans, and corn to pot. Bring to a boil. Reduce heat to low, cover, and simmer for 1 hour stirring occasionally.
  • Turn off burner and let sit for 1 hour to cool, place pot directly into refridgerator and cool for at least 2 hours to let flavors come together (preferably overnight.) Reheat, serve, and enjoy!
