Ingredients Nutrition

  • 4 small red potatoes, pre-cooked or 34 lb red potatoes
  • 1 onion, chopped
  • 4 egg whites
  • 14 cup frozen peppers and onions (pre-chopped frozen white onions, green bell peppers, red bell peppers, and parsley flakes)
  • 18 cup no-salt-added chicken broth

Directions

  1. Saute chicken broth and onions in skillet until onions become soft.
  2. Add potatoes and cook until potatoes are tender.
  3. Add seasoning blend, stirring as needed until onions turn translucent.
  4. Add egg whites and mix, cooking until egg whites are at desired consistency.
