  1. In a large mixing bowl, mix turkey, green onions, ginger, pepper and egg whites together thoroughly.
  2. Shape mixture into 1" balls and place on cookie sheet that's been lightly sprayed with non-fat cooking spray. (or you can line the pan with aluminum foil and not sue cooking spray as the meatballs should stick only slightly) Bake at 350 degrees for 15 minutes, or until lightly browned.
  3. Save pineapple liquid in a measuring cup after straining out the juice. Add water to the juice to make 1 cup total liquid combination.
  4. In a non-stick skillet, combine juice, sugar substitute, cornstarch, vinegar and green peppers over medium heat. Stir constantly, until sauce begins to thicken. (about 4 minutes).
  5. Mix in meatballs and pineapple evenly. Cover and simmer 10 minutes.
