- 1 (16 ounce) can spicy refried beans
- 1⁄2 cup prepared salsa
- 1⁄2 cup sour cream
- 2 ripe avocados
- 2 teaspoons lime juice
- 1⁄4 teaspoon cumin
- 1⁄4 teaspoon garlic powder
- 1 lb grated cheddar cheese
- 1⁄4 dice green onion
- 1⁄3 cup sliced black olives
directions
- In 13x9-inch baking dish spread even layer of refried beans.
- Spread salsa over beans.
- Carefully spread sour cream over salsa.
- In mixing bowl combine avocado, lime juice, cumin, and garlic powder. Combine until smooth.
- Spread avocado mixture over sour cream.
- Top avocado with an even layer of grated cheddar cheese.
- Sprinkle with sliced green onion.
- Finally top with sliced black olives.
- Serve with your Fritos scoops or your favorite tortilla chips.

Yum! Hubby and I ate this for dinner, as I have been craving it for weeks. I used a little less cheese and added some diced tomato. I like what you did with the avocado. Next time I might add some cilantro (fresh coriander) to the avocado mixture. Will be making it again for a Christmas BBQ very soon!

This dip was fantastic! I made it and brought it up to the cottage, and everyone loved it. The only thing I would change is to add some more spice somehow...perhaps by buying a can of refried beans that are already spicy, or by adding something to the beans to make them spicier. I will definatly be making this again!

I have been welcomed with a warmness that is unsurpassed. Everyone has shared their recipes, knowledge, humor, the lists goes on and on...U guys are wonderful. I tell everyone I know about this website in hopes of inspiring all of the would be chefs out there to keep experimenting because its doesnt have to be complicated to be yummy. I love preparing a meal that makes my family say make this again mom its great, its a satisfaction that my day to day job does not provide.
My pet peeves are lying, selfishness and judgemental people. I am raising my boys to be loving and giving young men. I hope that my love of cooking rubs off on them and that they will remember the times we have shared playing in the kitchen.
