Questions & Replies

  1. I know my late sister-in-law added ground beef to this dip to make it a meal. Could you mix the ground beef into the refried beans instead of making a separate layer? Also, could you load the dip into a taco shell?

  2. would an 11 x 9 dish be too big?

  3. What is Mexican cheese

  4. What type of lettuce should I use?

Reviews

  1. This was easy and delicious. Traveled well too! I mixed the taco seasoning up with the sour cream and added a tablespoon of salsa to the beans to make them more "dippable". Added chopped green onions to the top and will add cilantro next time. Love it.

  2. I have been making something similar since the 80's. The difference, refried beans on the bottom, then I mixed the guac-sour cream and taco seasoning together and spread that on top of the beans, than I add shredded sharp cheddar cheese, finely diced tomatoes or salsa(not both), sliced olives and finish it with sliced green onions. Always a hit and the first dish to be gone.

  3. I didn't like the taco mix in the beans. I added the taco mix with the sour cream. Mixed a cup of salsa with the beans. Much better.

  4. Made a few minor changes (don't we all). Added ground beef with taco seasoning as my 3rd layer, eliminated the olives because I didn't have any, and added chopped green onions on top. So, I guess that makes it a 9 layer dip. Actually, I added a few sliced Jalapeno's on top. Hmmm? Can we say 10 layer dip? YUM! Anyone who complains about this just needs to adjust their seasonings, unless they don't like Mexican, in which case they shouldn't be trying it in the first place.

  5. Didn't have refried beans. So I put campbells beans in the blender with brown sugar, worcestershire and onion powder. turned out pretty good.

Tweaks

  1. Added cilantro and green onions on top. Use a non-runny salsa and we prefer black olives over green olives in this recipe. YUM!

  2. Homemade black bean humus in lieu of refried beans, Greek yogurt replaces sour cream. Same great taste and mouth feel!

  3. I fry corn and put it in mine

  4. I love the 7 layer dip and it is cool and awesome.

  5. Awesome!!! This is perfect. We had family over for this meal and they enjoyed it too. To make a more frugal version you can substitute turkey for the meat. Bet you can't tell the difference.
