  • Preheat oven to 350°F Spray an 8x8 inch non-stick cake pan with cooking spray.
  • In a medium mixing bowl, using a sturdy whisk or spatula, mix the applesauce, vanilla, egg whites and sugar until they are well combined.
  • Add the flour, cocoa powder, espresso powder, baking powder, and salt. Stir the until just combined and no lumps remain.
  • Pour into prepared pan. Sprinkle the chocolate chips chips evenly over the top.
  • Bake for 20-22 minutes or until a toothpick inserted in the center comes out dry (a few crumbs are okay).
  • Transfer the pan to a cooling rack and allow them to cool 5 minutes. Cut into 12 equal brownies.

  2. Moistened and am delicious! This is very nice in low fat low calorie. It was necessary to add time a little at time to bake it. However, it is worthwhile that I wait. Thank you for sharing the recipe.
     
  3. Very light and moist. Not the dense chew brownie I am used to, but very good. Made as written, using a whisk to make sure batter came out smooth. At the end of 22 minutes did not pass the toothpick test, had to bake 5 more minutes. Love how low fat and calorie these are. Thanks so much for the post.
     
  4. Very moist! I have baked it twice & the 2nd time turnout better because I used a higher quality unsweetened cocoa. I had to cook it for 25 minutes in my oven. Very yummy!
     
  5. Well this is just so easy to put together! I love that it is 88 (or 108) calories. I baked it for 20 minutes and thought it was done but after it cooled it was still a little gooey in the middle, but that is not such a bad thing! Next time I will just bake it for 22 minutes. Really quick and easy recipe!

I've been a strict vegetarian for almost a year, and I'm constantly looking for new ideas for vegetarian/vegan meals and desserts. I'm not technically a vegan, but I don't drink milk or eat eggs due to stomach issues. I typically stay away from dairy-and/or-egg-based foods, but if a recipe contains one or both of them, but it isn't the main focus, then I'll eat it. I'm also allergic to hot peppers (like jalapenos, habaneros, and chipotles), and am generally sensitive to spiciness, so I'm always looking for recipes with flavor, but without the spice.
