  • To prepare stock, simmer breasts and other stock ingredients in canned broth until the meat begins to fall off the bone.
  • I usually leave them in the crockpot while I go to work.
  • Strain, reserving broth and meat.
  • Toss everything else.
  • Cut chicken into manageable pieces and add to stock.
  • Add the rest of the"goodies" and simmer until they reach desired texture.
  • You can add cooked pasta or rice to this also.

Having worked restaurant for many years, I continue to pursue my love of cooking. Maybe that has something to do with being forced to cook for large get togethers as a child! :) As a single working mom who's also in school, most of the recipes I use now are great quickies that I hope to pass to my daughter the day she sets foot in the kitchen.
