  • Preheat oven to 350 degrees.
  • Combine lime juice, cumin, and beans in a medium bowl, stirring until well combined. Spread mixture evenly into an 11x7 inch baking dish coated with cooking spray. Spread salsa evenly over beans.
  • Combine corn, onions, and olives; spoon corn mixture evenly over salsa. Sprinkle cheese over corn mixture.
  • Bake at 350 for 20 minutes or until bubbly.
  • Meanwhile combine sour cream and yogurt. Remove dip from oven and let stand 10 minutes. Top with sour cream-yogurt mixture; sprinkle with cilantro. Serve with tortilla chips.

I remember my mom let me bake cookies by myself for the first time when I was five. I was hooked from that time. I love to bake and cook. Trying new recipes is especially fun for me. I usually try at least two-three per week. Of course, I have a lot of favorites that we have over and over again too. One thing that I've really gotten into recently is trying to lighten up some of my favorite recipes. Homemade pizza is one of my specialties. My husband thinks my pancakes are the best.
